Kids Japanese Sweets Cooking Class: Steamed Matcha Cake with Japanese Rice Flour and Amazake

Join us for a fun and educational Japanese cooking class with the Natural Sweets Patisserie Association of Japan! This workshop will cover deliciously soft, steamed matcha cake made with Japanese rice flour and Amazake, a sweet and creamy fermented natural drink.
Although Amazake literally means “sweet sake,” it does not contain any alcohol. A deliciously sweet and creamy natural beverage, nowadays Amazake is enjoyed as a warming winter drink. Made from mixing rice, water, and rice koji, it is later covered with Koji mold (Aspergillus oryazae) to make the delightful drink. Amazake is made with koji which is cultured rice that has been incubated overnight to produce a lightly fermented food rich in enzymes and nutrients. It has 9 kinds of the essential amino acids, vitamin B1, dietary fiber, and oligosaccharide. As a traditional Japanese ingredient, amakaze is well enjoyed around the country.
Rice flour is a form of flour made by milling rice finely. It is gluten-free and can be used for a variety of cooking, including thickening soups and as a substitute for wheat flour. Although only often used in Asian countries, it is currently gathering attention around the world.
